Ingredients

  • 1 cup frozen strawberries about 140 g, still frozen
  • 1 scoop vanilla whey protein powder about 30 g
  • 1/3 cup milk
  • 1/4 teaspoon xanthan gum optional, no more than 1/2 teaspoon

Method

  1. Put the frozen strawberries, protein powder, milk and xanthan gum (if using) in a food processor or a large mixing bowl.
  2. In a food processor, run on high for 2 to 3 minutes. With an electric hand mixer on high, whip for 5 to 8 minutes instead.
  3. Stop when the mixture is pale, fluffy and about three times its starting volume. Eat right away.

Notes

Protein powder: use whey or a whey blend; it is what whips into a stable foam.
Xanthan gum is optional; it makes the fluff thicker and slower to deflate. Do not use more than 1/2 teaspoon.
Serve immediately: protein fluff deflates as it sits and does not freeze well.
