Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, mix sliced apples with 1 tablespoon of sugar and ground cinnamon; set aside.
- In another bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, followed by vanilla extract.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to the wet mixture, stirring until combined.
Baking
- Grease a 9x13 inch baking pan and pour half the batter into it.
- Spread the apple mixture evenly over the batter, then pour the remaining batter on top.
- In a small bowl, combine granola with a little melted butter, sprinkle over the batter.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let the cake cool for about 10 minutes before slicing.
- Serve warm or at room temperature, optionally with whipped cream.

Store in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to three months.
