Ingredients
  

For the Cake
  • 3 cups apples, peeled and sliced Use a mix of tart and sweet apples for best results.
  • 2 cups all-purpose flour
  • 1 cup granulated sugar Adjust based on apple sweetness.
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
For the Topping
  • 1/2 cup granola For topping, can substitute with nuts or chocolate chips.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, mix sliced apples with 1 tablespoon of sugar and ground cinnamon; set aside.
  3. In another bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to the wet mixture, stirring until combined.
Baking
  1. Grease a 9x13 inch baking pan and pour half the batter into it.
  2. Spread the apple mixture evenly over the batter, then pour the remaining batter on top.
  3. In a small bowl, combine granola with a little melted butter, sprinkle over the batter.
  4. Bake for 45-50 minutes or until a toothpick comes out clean.
  5. Let the cake cool for about 10 minutes before slicing.
  6. Serve warm or at room temperature, optionally with whipped cream.

Notes

Store in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to three months.
