Ingredients
  

Cookie Dough
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Can be replaced with plant-based alternative
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup chopped apples Tart apples work best
Cream Cheese Filling
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract, mixing until well blended.
  5. Gradually add the whisked flour mixture to the wet ingredients. Stir until just combined.
  6. Mix in ground cinnamon and chopped apples, ensuring they are well distributed within the dough.
Filling
  1. In another bowl, beat together the cream cheese and powdered sugar until smooth.
Baking
  1. Drop spoonfuls of cookie dough onto the prepared baking sheet, then create a small indentation in the center of each cookie with your thumb.
  2. Fill the indentation with a small amount of the cream cheese mixture.
  3. Bake for 12-15 minutes or until the edges are golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to five days. Can be frozen for up to three months.
