  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 whole lemon, zest and juice Zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Prepare the foil: Cut squares of aluminum foil large enough to fold the salmon and asparagus individually.
  3. Arrange the salmon: On the center of each foil square, place a salmon fillet and arrange asparagus around it.
  4. Season: Drizzle olive oil over both the salmon and asparagus, then sprinkle with minced garlic, lemon zest, and juice. Season with salt and pepper to taste.
  5. Seal the packs: Fold the sides of the foil over the salmon and asparagus to create a sealed packet.
  6. Bake: Place the foil packs on a baking sheet and bake in the preheated oven for about 15-20 minutes, depending on the thickness of the salmon.
  7. Serve: Once cooked, carefully remove the foil packs from the oven. Open them to release steam and serve warm, garnished with fresh herbs if desired.

Notes

If using other vegetables instead of asparagus, consider green beans or zucchini. Ensure the foil packs are sealed tightly to retain moisture.
