Ingredients

Main Ingredients
  • 2 pounds potatoes, peeled and cubed Starchy varieties like Russet or Yukon Gold are recommended for crispiness.
  • 1 cup beef tallow Use Halal-friendly fat like ghee if preferred.
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh rosemary (optional) Add for extra flavor if desired.

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse and peel the potatoes, cutting them into even cubes.
  3. In a large oven-safe skillet or roasting pan, melt the beef tallow over medium heat.
  4. Toss the cubed potatoes with salt, pepper, garlic powder, and optional rosemary in a separate bowl.
  5. Transfer the potatoes into the skillet with the hot tallow and ensure they’re evenly coated.
Cooking
  1. Arrange the potatoes evenly and roast in the oven, turning them halfway through, for about 40-50 minutes.
  2. Once roasted, remove from the oven, cool slightly, and adjust seasoning if needed before serving.

Notes

After indulging, store any leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, spread on a baking sheet before transferring to a freezer bag. Reheat in a hot oven to regain crispiness. Make sure not to overcrowd the pan while roasting to avoid steaming.
