  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set it aside.
  2. In a medium bowl, mix the graham cracker crumbs with melted butter until well combined. Press this mixture firmly into the bottom of the prepared springform pan to form an even layer.
  3. In a large mixing bowl, combine the softened cream cheese and sugar until smooth. Add in the pumpkin and mix thoroughly. One by one, incorporate the eggs, ensuring each is fully blended before adding the next. Finally, mix in the vanilla extract, cinnamon, nutmeg, ginger, and salt until everything is well integrated.
  4. Pour the creamy pumpkin filling over the crust in the springform pan, smoothing the top with a spatula.
Baking
  1. Carefully transfer the pan to the preheated oven and bake for about 60 minutes, or until the center is set with a slight jiggle.
Cooling
  1. After baking, turn off the oven and leave the cheesecake inside for an hour to cool. Once cooled, refrigerate for at least 4 hours or overnight for the best flavor.
Serving
  1. When ready to serve, remove from the springform pan. You can top with whipped cream and extra spices if desired.
