For the Chicken
  • 2 pieces boneless, skinless chicken breasts Ensure they are fresh and halal-compliant.
  • 2 tablespoons blackening seasoning
  • 1 tablespoon olive oil Used for cooking the chicken.
For the Salad
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • 1 medium avocado, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup ranch dressing or dressing of choice Serve on the side or drizzle over salad.

Preparation
  1. Start by seasoning the chicken breasts generously with blackening seasoning on both sides.
  2. In a skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the chicken breasts and cook for about 5–7 minutes on each side, or until cooked through and blackened. Remove from the skillet and let them rest for a few minutes.
  3. Once cooled slightly, slice the chicken into strips.
Assembly
  1. In a large bowl, combine the mixed greens, cherry tomatoes, sliced red onion, and diced avocado. Gently toss the salad together.
  2. Top the salad with the sliced blackened chicken and sprinkle the feta cheese over the top.
  3. Drizzle your choice of dressing over the salad just before serving, or you can serve the dressing on the side.

Notes

Consider substitutions to suit your taste, like using grilled shrimp or marinated tofu. Ensure the skillet is hot to achieve the best blackened crust. Store leftovers in an airtight container for 2-3 days, keeping dressing separate.
