Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, and salt until well combined.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
- Beat in the egg and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until a dough forms.
- In a small bowl, combine the brown sugar and ground cinnamon, then fold into your cookie dough.
- Use a tablespoon to scoop portions of dough onto the prepared baking sheet, spacing them a couple of inches apart.
Baking
- Bake the cookies in the preheated oven for 12-15 minutes until the edges are golden brown.
- Allow the cookies to cool on a wire rack before drizzling with icing sugar mixed with a little water.
Notes
Store cookies in an airtight container at room temperature for about a week. They freeze well for up to three months. Thaw at room temperature and reheat in the microwave to regain softness.
