Ingredients
  

Dry Ingredients
  • 2 3/4 cups all-purpose flour Make sure to measure accurately for best results.
  • 2 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Ensure butter is softened but not melted.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup packed brown sugar
Cinnamon Filling
  • 1 tbsp ground cinnamon
Toppings
  • 1/2 cup icing sugar For drizzle, mix with a little water.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually mix the dry ingredients into the wet mixture until a dough forms.
  6. In a small bowl, combine the brown sugar and ground cinnamon, then fold into your cookie dough.
  7. Use a tablespoon to scoop portions of dough onto the prepared baking sheet, spacing them a couple of inches apart.
Baking
  1. Bake the cookies in the preheated oven for 12-15 minutes until the edges are golden brown.
  2. Allow the cookies to cool on a wire rack before drizzling with icing sugar mixed with a little water.

Notes

Store cookies in an airtight container at room temperature for about a week. They freeze well for up to three months. Thaw at room temperature and reheat in the microwave to regain softness.
