Ingredients

  • 1 wheel brie 8 oz / 225 g, rind on
  • 1/3 cup whole berry cranberry sauce 90 g
  • 1/4 cup chopped pecans 30 g
  • 2 tbsp maple syrup
  • 1 small sprig fresh rosemary plus a few chopped leaves
  • 1 pinch flaky salt optional
  • crackers, sliced baguette and apple or pear slices to serve

Method

  1. Take the brie out of the refrigerator about 30 minutes before baking.
  2. Heat the oven to 350°F (175°C). Place the brie in a small baking dish or on a parchment-lined baking sheet and lightly score the top rind in a crosshatch.
  3. Spread the cranberry sauce over the brie. Toss the pecans with the maple syrup and chopped rosemary and scatter over the top.
  4. Bake for 12 to 15 minutes, until the brie is soft when pressed and just starting to ooze but still holds its shape.
  5. Rest for about 10 minutes, garnish with the rosemary sprig and flaky salt, and serve warm with crackers, bread and fruit.

Notes

Storage: do not leave the brie out of the refrigerator for more than 2 hours. Wrap and refrigerate leftovers and use them within a few days on toast or sandwiches.
Make ahead: score the brie and mix the pecan topping a few hours ahead; keep the brie covered in the refrigerator and bake just before serving.
Substitutions: honey instead of maple syrup; walnuts or sliced almonds instead of pecans; add 1/2 tsp orange zest to the cranberry sauce.
In puff pastry: wrap the topped brie in thawed puff pastry, brush with beaten egg and bake until the pastry is deep golden.
Nutrition: calories are an estimate per serving (1/6 of the brie with topping, without crackers or bread), calculated from standard ingredient values, not a laboratory analysis.
