Ingredients

Main Ingredients
  • 2 cups cooked chicken, shredded Use halal-certified chicken for compliance.
  • 1 cup pasta (e.g., penne or rotini)
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk.
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 tablespoons Cajun seasoning Adjust according to taste.
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • to garnish Chopped parsley

Method

Cooking Instructions
  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and bell pepper, sautéing until they are soft and aromatic – about 5 minutes.
  2. Stir in the shredded chicken, allowing it to heat through. If you have leftover chicken from another recipe, this is a great way to use it!
  3. Pour in the chicken broth and bring it to a gentle simmer. This will infuse all those wonderful flavors together.
  4. Next, add the pasta and Cajun seasoning. Allow the soup to simmer for about 10-12 minutes, or until the pasta is cooked to your liking.
  5. Once the pasta is tender, stir in the heavy cream, adjusting for taste with salt and pepper as needed. Let it simmer for an additional 5 minutes.
  6. Ladle the soup into bowls, garnishing with chopped parsley for a fresh touch.

Notes

If storing leftovers, keep them in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months. Reheat on the stovetop over low heat, adding more broth or cream if needed.
