  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
For Dusting
  • 1/4 cup powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Incorporate the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
  5. Slowly alternate adding the dry ingredients and buttermilk to the butter mixture, starting and ending with the flour mix. Stir until just combined.
  6. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 12-14 minutes or until the edges are lightly golden. The centers may look a little underdone — that’s okay!
  2. Allow the cookies to cool slightly before dusting them with powdered sugar.

Notes

For added flavor, consider substituting some flour with almond flour. Ensure your butter is at room temperature for easier creaming. Keep an eye on cookies while baking to avoid over-baking.
