  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped

Preparation
  1. Preheat your oven to 425°F (220°C). A hot oven is key for achieving that crispy texture!
  2. Wash the baby potatoes thoroughly and cut them in half to ensure even cooking.
  3. In a large mixing bowl, combine the halved potatoes, minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper. Toss everything together until the potatoes are well coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet. This helps them roast evenly.
  5. Place the baking sheet in the preheated oven. Roast for about 30-35 minutes, or until the potatoes are golden brown and tender when pierced with a fork. Make sure to flip the potatoes halfway through for an even roast.
  6. Remove from the oven, and serve hot as a delightful side dish!

Notes

Leftover Garlic Herb Roasted Potatoes can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze them up to 2 months. Reheat in a preheated oven at 400°F (200°C) for 15-20 minutes until crispy.
