- Preheat your oven to 425°F (220°C). A hot oven is key for achieving that crispy texture!
- Wash the baby potatoes thoroughly and cut them in half to ensure even cooking.
- In a large mixing bowl, combine the halved potatoes, minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper. Toss everything together until the potatoes are well coated.
- Spread the seasoned potatoes in a single layer on a baking sheet. This helps them roast evenly.
- Place the baking sheet in the preheated oven. Roast for about 30-35 minutes, or until the potatoes are golden brown and tender when pierced with a fork. Make sure to flip the potatoes halfway through for an even roast.
- Remove from the oven, and serve hot as a delightful side dish!
Notes
Leftover Garlic Herb Roasted Potatoes can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze them up to 2 months. Reheat in a preheated oven at 400°F (200°C) for 15-20 minutes until crispy.
