  • 2 tablespoons olive oil
  • 2 limes juiced
  • Salt and pepper to taste

  • 4 pieces boneless, skinless chicken breasts

Preparation
  1. In a medium bowl, combine the lime juice, chili powder, olive oil, salt, and pepper. Whisk until well blended.
  2. Place the chicken breasts in a zip-lock bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, or up to several hours if possible.
Grilling
  1. Prepare your grill by preheating it to medium-high heat.
  2. Once heated, remove the chicken from the marinade and place it directly on the grill. Cook for 6-8 minutes on each side, or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (75°C).
Serving
  1. Remove from the grill and let rest for a few minutes. Garnish with fresh cilantro before serving. Enjoy your vibrant grilled chicken with a side of your choice!

Notes

For best results, marinate for at least an hour to allow the flavors to penetrate the chicken. If you're short on time, even 30 minutes will still make a difference. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for about 3 months. When reheating, use a preheated oven at 350°F (175°C) for 15-20 minutes to retain moisture.
