Ingredients

For the Marinade
  • 1 pound chicken breast, cut into 1-inch cubes
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • pieces Skewers (soaked in water if wooden) Soak wooden skewers for at least 30 minutes

Method

Preparation
  1. In a medium bowl, combine lemon juice, minced garlic, olive oil, salt, and pepper. Add the cubed chicken and mix until well coated. Allow it to marinate for at least 15 minutes or up to 2 hours in the refrigerator for maximum flavor.
  2. Preheat your grill to medium-high heat. If using wooden skewers, ensure they have soaked in water for at least 30 minutes to prevent burning.
  3. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
Grilling
  1. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and no longer pink in the center.
  2. Remove from the grill and let rest for a few minutes before serving. Enjoy your skewers with your favorite dipping sauce or alongside a fresh salad!

Notes

Substitutions: Feel free to swap out chicken breast for thigh meat for an even juicier result. You can also add vegetables like bell peppers or zucchini to the skewers for a colorful addition. Avoid overcrowding the skewers for even cooking and beautiful grill marks. Store leftovers in an airtight container in the fridge for 3-4 days and reheat on the grill or in a skillet.
