Ingredients

Main Ingredients
  • 1 pound mushrooms (cremini or button) Select fresh, high-quality mushrooms. Avoid rinsing under water; clean gently with a damp cloth.
  • 2 tablespoons miso paste Can substitute with tahini or soy sauce for a savory flavor.
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • Green onions (for garnish)

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Prepare the mushrooms by trimming the stems. Leave them whole or cut them in half for a rustic look.
  3. In a bowl, combine melted butter, miso paste, minced garlic, olive oil, salt, and pepper. Whisk until smooth to make the marinade.
  4. Toss the mushrooms in the marinade, ensuring they are evenly coated.
  5. Spread them out on a baking sheet lined with parchment paper, ensuring they have enough space to roast.
Cooking
  1. Roast in the oven for 20-25 minutes or until golden and crispy, stirring halfway through for even cooking.
  2. Garnish with sliced green onions before serving.

Notes

For perfect texture, do not overcrowd the baking sheet. Store leftovers in an airtight container in the fridge for 3-4 days; for best results, consume fresh.
