  • 8 oz pasta (your choice) Any pasta variety works for this dish.
  • 2 cups fresh spinach Washed and dried before use.
  • 1 cup mushrooms, sliced Use any type of mushrooms you prefer.
  • 1/2 cup grated Parmesan cheese For melting and flavor.
  • 3 cloves garlic, minced Provides aromatic flavor.
  • 2 tbsp olive oil For sautéing vegetables.
  • to taste Salt and pepper For seasoning.
  • to taste Red pepper flakes (optional) For added heat.

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sautéing the Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are tender.
Adding Spinach
  1. Increase the heat slightly, then add the fresh spinach to the skillet. Sauté until the spinach wilts, which takes about 2-3 minutes.
Combining Ingredients
  1. Add the cooked pasta to the skillet with the sautéed veggies. Toss to combine. Season with salt, pepper, and red pepper flakes if using.
Finishing Touch
  1. Remove from heat and sprinkle the grated Parmesan cheese over the top, allowing it to melt slightly as you stir everything to combine.

  1. Serve immediately and enjoy!

Notes

Substitutions are encouraged; use any type of pasta or swap spinach for kale or arugula. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
