Method
Cooking the Pasta
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sautéing the Vegetables
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms. Sauté for about 3-4 minutes until the mushrooms are tender.
Adding Spinach
- Increase the heat slightly, then add the fresh spinach to the skillet. Sauté until the spinach wilts, which takes about 2-3 minutes.
Combining Ingredients
- Add the cooked pasta to the skillet with the sautéed veggies. Toss to combine. Season with salt, pepper, and red pepper flakes if using.
Finishing Touch
- Remove from heat and sprinkle the grated Parmesan cheese over the top, allowing it to melt slightly as you stir everything to combine.
