Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In a separate bowl, mix the milk, pumpkin puree, melted butter, egg, brown sugar, and vanilla extract until well combined.
- Gradually fold the wet ingredients into the dry mixture, stirring until a dough forms.
- On a floured surface, knead the dough for a few minutes until smooth.
- Roll the dough into a rectangle about 1/2 inch thick.
- Lightly sprinkle additional cinnamon over the surface of the rolled dough.
- Starting from one side, carefully roll the dough into a log, then slice into equal pieces (about 1 inch thick).
Baking
- Place the rolls on a greased baking sheet and bake for about 25-30 minutes or until lightly golden.
- Allow the rolls to cool before icing. You can spread a cream cheese glaze on top for extra sweetness.
Notes
For best results, avoid overbaking. Store leftovers in an airtight container for up to five days, or freeze for up to two months.
