Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

- Add the pumpkin puree and egg to the mixture, and beat until well combined.

- Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheet, allowing some space between each.
Baking
- Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
Frosting
- While the cookies cool, prepare the frosting by combining softened cream cheese, powdered sugar, and vanilla extract in a bowl, mixing until smooth.
- Once cookies are cool, spread a generous layer of cream cheese frosting on top of each cookie.
