Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup honey Can be substituted with agave nectar.
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Topping
  • Sea salt for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the all-purpose flour, baking soda, salt, and ground cinnamon, mixing well until evenly distributed.
  3. In a separate bowl, cream the softened butter, honey, and brown sugar until light and fluffy, about 3 to 5 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Be careful not to overmix!
Baking
  1. Using a tablespoon or cookie scoop, portion the cookie dough onto the prepared baking sheet, leaving sufficient space between each cookie.
  2. Sprinkle a pinch of sea salt on top of each cookie before baking.
  3. Bake for 10-12 minutes or until the edges are golden brown.
  4. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week. For freezing, place in a freezer-safe bag layered with parchment paper for up to three months. Reheat in the oven for a few minutes before serving.
