Cooking Steps
  1. In a large pot, cook the halal sausage over medium heat until it’s browned.
  2. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-5 minutes.
  3. Pour in the chicken broth, diced tomatoes, mixed vegetables, and Italian seasoning. Stir well to combine.
  4. Bring the mixture to a boil, then reduce to a simmer. Allow it to cook for 20-25 minutes.
  5. Taste your soup and season with salt and pepper. If using pasta, add it in during the last 5 minutes of cooking.
  6. Ladle into bowls and add any desired toppings, like freshly chopped herbs or cheese.

Notes

To elevate your soup, experiment with different vegetables. Simmer longer for deeper flavors, and always taste as you cook for proper seasoning. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for 3 months. Reheat on the stovetop for best results.
