Juicy, golden chicken on short skewers, spooned over with a silky sauce full of cracked black pepper, softened shallot and a little Parmesan. That is this air fryer chicken au poivre: the flavor of the French bistro classic, made on a weeknight with no whole bird to butterfly, no flaming brandy and no heavy cream.
The chicken cooks in the air fryer in about 10 minutes while the sauce simmers on the stove. Chicken broth and half-and-half replace the cream and cognac of the original, so the sauce is lighter but still rich enough to coat a spoon. Serve the skewers over mashed potatoes or rice with a green vegetable, and dinner looks far more impressive than the effort it took.

Ingredients
For the chicken skewers
- 1 1/2 lb (680 g) boneless, skinless chicken breasts or tenderloins, cut into 1-inch (2.5 cm) pieces – even pieces cook at the same speed.
- 1 tbsp olive oil or a light coat of cooking spray.
- 3/4 tsp salt, 1/2 tsp garlic powder and 1/2 tsp black pepper.
For the peppercorn sauce
- 1 tbsp butter.
- 1 shallot, finely minced – milder and sweeter than onion, with a hint of garlic.
- 1 garlic clove, minced.
- 1 1/2 to 2 tsp black peppercorns, coarsely cracked – the heart of the dish (see below).
- 3/4 cup (180 ml) low-sodium chicken broth.
- 1/2 cup (120 ml) half-and-half – lighter than heavy cream but still creamy.
- 2 tbsp finely grated Parmesan, optional – adds body and a savory edge.
- Salt, to taste.
To serve
- Mashed potatoes, rice or a mix of potatoes and riced cauliflower, plus a green vegetable such as green beans or broccoli.
How to Make It
1. Season and skewer the chicken – 10 minutes
Toss the chicken pieces with the oil, salt, garlic powder and pepper. Thread them onto the skewers, leaving a little space between pieces. If you use wooden skewers, soak them in water while you cut the chicken and trim them to fit your air fryer basket. The pieces should be lightly coated and not packed tightly together, so hot air can reach every side.
2. Air fry – 400°F (200°C), 8 to 12 minutes
Arrange the skewers in a single layer in the basket, working in batches if needed. Cook for 4 to 5 minutes, flip, then cook for another 4 to 6 minutes. Tenderloins and smaller pieces finish faster than chunks of thick breast. The chicken is done when the outside is golden and the thickest piece reads 165°F (74°C) on an instant-read thermometer.
3. Soften the shallot – medium heat, 2 to 3 minutes
While the chicken cooks, melt the butter in a small skillet over medium heat. Add the shallot, garlic and cracked pepper and cook, stirring, until the shallot is soft and the pepper smells toasty. The shallot should be translucent, not browned.
4. Reduce the broth – 3 to 4 minutes
Pour in the broth, scrape the bottom of the pan and let it simmer until reduced by about half. The bubbles should look slightly larger and slower as the broth concentrates.

5. Add the half-and-half – medium-low heat, 4 to 5 minutes
Stir in the half-and-half and Parmesan, if using. Simmer gently, stirring now and then, until the sauce thickens slightly. Taste and add salt if needed. The sauce is ready when it coats the back of a spoon and a line drawn through it with your finger holds for a moment. Keep it at a gentle simmer; a hard boil can make half-and-half separate.
6. Serve – 2 minutes
Plate the skewers over mashed potatoes or rice with a green vegetable and spoon the warm sauce over the chicken. Serve right away while the chicken is still juicy and the sauce is glossy.
Classic Au Poivre vs. This Lighter Version
Steak au poivre is a French bistro dish in which the meat is crusted with cracked peppercorns, seared, then served with a pan sauce built from cognac and cream. Chicken versions follow the same idea. This recipe keeps the core flavors, pepper, shallot and a creamy pan sauce, and changes the parts that take the most time or add the most richness.
| Element | Classic au poivre | This version |
|---|---|---|
| Meat | Steak or a whole butterflied chicken, pan-seared or roasted | Chicken pieces on skewers, air-fried |
| Pepper | Pressed onto the meat as a crust | Cooked into the sauce |
| Alcohol | Cognac or brandy, often flambéed | None; chicken broth instead |
| Dairy | Heavy cream | Half-and-half, plus a little Parmesan |
| Time | About 30 minutes for steak, much longer for a whole bird | About 35 minutes, mostly hands-off |
The result is not identical to the restaurant version, but the sauce has the same peppery bite and creamy finish, and it pairs with lean chicken without feeling heavy.
Getting the Pepper Right
Pepper is the main flavor here, so how you prepare it matters. Pre-ground black pepper from a tin tastes flat and dusty compared with whole peppercorns cracked just before cooking. Cracking also gives you larger pieces that release flavor slowly in the sauce, instead of a fine powder that makes it gray.
To crack peppercorns without a mortar, put them in a zip-top bag and press firmly with the bottom of a heavy pan or a rolling pin until they break into coarse pieces. A pepper mill set to its coarsest grind works too. Toasting the pepper in butter with the shallot for a minute softens its sharp edge and brings out a warm, almost floral aroma.
Start with 1 1/2 teaspoons if you prefer a milder sauce. For a punchier, more traditional au poivre, use 2 teaspoons or more, or mix black peppercorns with green or pink ones.
Air Fryer Tips and Serving Ideas
Air fryers are small, and crowding the basket blocks the hot air that browns the chicken. The USDA Food Safety and Inspection Service recommends cooking in batches rather than overfilling the basket, and checking that poultry reaches 165°F (74°C) with a food thermometer, since cooking times vary between models. Short skewers that fit flat in the basket cook more evenly than long ones angled against the sides.
- No air fryer: bake the skewers on a lined sheet pan at 425°F (220°C) for 12 to 15 minutes, or sear the chicken pieces in a skillet, then make the sauce in the same pan.
- Lighter sides: mash potatoes half and half with riced cauliflower, or serve the skewers over a pile of roasted green beans.
- Kid-friendly: serve the sauce on the side for dipping and use a little less pepper.
- Leftovers: refrigerate the chicken and sauce separately and eat within 3 to 4 days. Rewarm the sauce gently over low heat, adding a splash of broth if it has thickened.
