Ingredients

For the beef
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 tbsp minced garlic
  • 1 lb ground beef 450 g, 80-85% lean
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp tomato paste
  • 1/2 cup water 120 ml
  • 2 tbsp Worcestershire sauce
For the caramelized onions
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small onion diced
  • 1 pinch salt
For the burger sauce
  • 3 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 to 2 tsp sweet pickle relish
  • 1/2 tbsp Worcestershire sauce
  • salt, pepper and paprika a pinch each
To assemble
  • 4 large flour tortillas 10-inch, burrito size
  • 1 1/2 cups shredded cheddar 170 g
  • 2 tbsp butter melted
  • 1 small clove garlic minced
  • 1 tbsp chopped parsley

Method

  1. Caramelize the onions: cook the diced onion in the oil and butter with a pinch of salt over medium-low heat, stirring now and then, until soft and deep golden, about 15 minutes.
  2. Stir together all the burger sauce ingredients.
  3. In a second skillet, cook the onion in the oil for 3 minutes, add the garlic for 30 seconds, then add the beef and cook, breaking it up, until no pink remains (160°F / 71°C). Stir in the spices and tomato paste.
  4. Add the water and Worcestershire sauce and simmer until the liquid has mostly reduced.
  5. Warm the tortillas. Fill each with cheddar, a quarter of the beef and onions and a drizzle of burger sauce. Fold in the sides and roll up tightly.
  6. Brush with garlic butter and toast seam side down in a skillet over medium heat, 2 to 3 minutes per side, until golden.
  7. Sprinkle with parsley, cut in half and serve with the remaining burger sauce.
