Four tortillas, one bowl, no oven. These cranberry feta pinwheels come together in about 15 minutes of hands-on work, then spend an hour in the fridge while you get on with everything else. That is the whole appeal: an appetizer you can make the day before, slice when guests are on their way and set out without reheating anything.
Each bite is a spiral of soft flour tortilla wrapped around creamy whipped cream cheese, salty crumbled feta, chewy dried cranberries and a little sharpness from green onion. The red and green flecks make them look festive on a holiday table, but they are just as handy for a baby shower, a potluck or a game-day spread next to a bowl of fried pickle dip. One batch makes about 48 pieces, so a single bowl of filling goes a long way.

Ingredients
- 8 oz (225 g) cream cheese, softened – full-fat block cream cheese sets firmest in the fridge, which makes cleaner slices. A tub of spreadable cream cheese works too.
- 1 cup (about 150 g) crumbled feta – brings the salty, tangy contrast to the sweet cranberries.
- 1 cup (about 120 g) sweetened dried cranberries, roughly chopped – chopping them keeps the spirals even and stops whole berries from tearing the tortilla when you slice.
- 1/4 cup sliced green onions, about 2 to 3 – a mild bite and the green color. Chives work the same way.
- 1 to 2 tbsp milk, only if needed – loosens a stiff filling so it spreads without tearing the tortillas.
- 4 large flour tortillas, 10-inch – large, soft tortillas roll tightly without cracking. Spinach tortillas add more green.
How to Make It
1. Make the filling – 5 minutes
In a medium bowl, beat the softened cream cheese with a hand mixer or a sturdy spatula until smooth and fluffy. Stir in the feta, chopped cranberries and green onions. If the mixture feels too thick to spread, add milk a tablespoon at a time. The filling should hold its shape on a spoon but spread easily, like thick frosting.
2. Spread the tortillas – 5 minutes
Lay the tortillas flat and divide the filling evenly between them, about a quarter of the bowl for each. Spread it in a thin, even layer right to the edges, leaving a 1/2-inch (1 cm) strip bare along the far side. That clean strip is where the roll seals; filling there gets pushed out when you roll.
3. Roll tightly – 5 minutes
Starting at the edge nearest you, roll each tortilla up as tightly as you can, tucking the first turn firmly so there is no gap in the center. Finish with the seam on the bottom.

4. Wrap and chill – at least 1 hour
Wrap each log snugly in plastic wrap, twisting the ends like a candy wrapper, and refrigerate for at least 1 hour, or up to 24 hours. The logs are ready when they feel firm all the way through when you press them gently.
5. Slice and serve – 5 minutes
Unwrap the logs and trim a thin slice off each end. Cut each log into 12 slices, about 3/4 inch (2 cm) thick, with a serrated knife and a gentle sawing motion. Arrange them cut side up on a platter. Clean, round spirals mean the logs were cold enough; if they squash, chill them a little longer.
Tips for Neat, Tight Spirals
Most pinwheel problems come down to temperature and pressure. A few small habits make the difference between round spirals and flattened ovals.
- Use room-temperature tortillas. Cold tortillas straight from the fridge are stiff and tend to crack along the first fold. If yours are cold, warm them for 10 seconds in the microwave.
- Spread thinly. A thick layer of filling squeezes out of the ends and makes the roll loose. It may look like too little on each tortilla; it is enough.
- Roll tight from the very first turn. A loose start leaves a hole in the middle of every slice.
- Do not skip the chill. Cold cream cheese is what holds the spiral together. Sliced straight away, the rolls flatten under the knife.
- Saw, do not press. A serrated knife cuts through the tortilla without crushing it. Wipe the blade every few cuts if the filling starts to build up.

Make-Ahead and Party Planning
Pinwheels are at their best made a day ahead. Keep the logs wrapped in the refrigerator for up to 24 hours and slice them shortly before serving, so the cut edges stay fresh and the tortilla does not dry out. Already sliced, they keep covered in the fridge for a few hours, which helps if you are setting up early.
Because the filling is mostly cheese, treat the platter like any other cold dairy dish. The FDA guide to serving safe buffets advises keeping cold foods at 40°F (4°C) or colder and discarding perishables left out for more than 2 hours, or 1 hour when it is above 90°F (32°C). For a long party, set out half the pinwheels and keep the rest chilled, or rest the platter on a tray of ice.
Leftover slices are best eaten within a day; keep them covered in the refrigerator, as the tortilla softens over time. Freezing is not recommended, because the texture of both the filling and the tortilla suffers after thawing.
For a full appetizer spread, they sit well next to something crunchy like crispy homemade BBQ chips.
Variations
- Goat cheese: replace the feta with the same amount of crumbled goat cheese for a softer, tangier filling.
- Add crunch: stir in 1/3 cup of finely chopped toasted pecans or walnuts.
- Orange cranberry: add 1 teaspoon of finely grated orange zest to the filling.
- Turkey pinwheels: lay thin slices of deli turkey over the filling before rolling for a more filling bite.
- A little heat: mix in 1 to 2 tablespoons of finely chopped pickled jalapeños.
