If your slow cooker BBQ chicken tends to come out dry and stringy, sitting in a sauce so thin it soaks straight into the rice, two things are usually to blame: lean chicken breasts and too much liquid. Breasts have very little fat to protect them through hours of gentle heat, and anything poured into a slow cooker stays there, because almost nothing evaporates under the lid.
This slow cooker cranberry BBQ chicken avoids both. It uses boneless chicken thighs, which stay juicy even if they cook a little longer than planned, and it adds no broth or water at all. A can of whole berry cranberry sauce and a half cup of barbecue sauce melt into a sweet, tangy, slightly smoky glaze as the chicken releases its own juices. A quick simmer on the stove at the end turns that liquid into a sauce thick enough to cling to every piece. It is an easy dump-and-go dinner with a holiday color, and a smart way to use up a can of cranberry sauce.

Ingredients
For the chicken
- 2 lb (900 g) boneless, skinless chicken thighs, about 8 thighs – thighs stay tender over a long cook where breasts dry out.
- 1/2 tsp salt and 1/2 tsp black pepper – kept modest, because barbecue sauce already brings salt.
- 1 tsp smoked paprika – deepens the smoky side of the sauce.
- 1 medium yellow onion, thinly sliced – it forms a bed under the chicken and melts into the sauce.
For the cranberry BBQ sauce
- 1 can (14 oz / 397 g) whole berry cranberry sauce – the whole berries keep some texture; jellied sauce works but turns the glaze smoother and sweeter.
- 1/2 cup (120 ml) barbecue sauce – a smoky or hickory style balances the sweet cranberries best.
- 2 tbsp apple cider vinegar – sharpens the flavor so the sauce does not taste flat.
- 1 tbsp Worcestershire sauce – adds savory depth.
- 2 garlic cloves, minced.
To thicken and serve
- 1 tbsp cornstarch mixed with 1 tbsp cold water – the slurry that turns the cooking juices into a glaze.
- 2 green onions, sliced, for serving.
- Cooked rice, mashed potatoes or soft rolls, to serve.
How to Make It
1. Season the chicken – 5 minutes
Pat the chicken thighs dry with paper towels and sprinkle both sides with the salt, pepper and smoked paprika. Dry chicken holds the seasoning; wet chicken lets it slide off into the liquid.
2. Layer the slow cooker – 5 minutes
Spread the sliced onion over the bottom of the slow cooker and lay the chicken thighs on top, as flat as possible. In a bowl, whisk together the cranberry sauce, barbecue sauce, vinegar, Worcestershire sauce and garlic, then spoon it evenly over the chicken. Do not add any water or broth. The sauce should cover the top of the chicken in a thick layer; it will look like too little liquid, and that is exactly right.

3. Slow cook – LOW, 4 to 5 hours
Cover and cook on LOW for 4 to 5 hours or on HIGH for 3 to 4 hours, without lifting the lid. The chicken is done when it reaches at least 165°F (74°C) in the thickest piece and pulls apart easily with a fork. Slow cookers vary a lot, so check at the start of the range the first time you make it.
4. Thicken the sauce – medium-high, 5 to 8 minutes
Transfer the chicken to a plate and cover it loosely with foil. Pour the liquid and onions from the slow cooker into a small saucepan and bring to a boil. Whisk in the cornstarch slurry, then lower the heat and simmer, stirring, until the sauce thickens. It is ready when it coats the back of a spoon and a line drawn through it with your finger holds its shape. No saucepan? Stir the slurry straight into the slow cooker, set it to HIGH and cook with the lid off for 15 to 20 minutes.
5. Shred or serve whole – 2 minutes
Return the chicken to the slow cooker and pour the thickened sauce over it. Serve the thighs whole, or shred them with two forks and toss them in the sauce. Sprinkle with green onions just before serving. Shredded chicken soaks up more sauce; whole thighs look better on a plate.
Why This Version Uses Thighs and No Broth
Most slow cooker chicken problems come from the same place: the appliance holds moisture in and cooks very gently, for a long time. Boneless thighs contain more fat and connective tissue than breasts, so they stay moist across the whole 4 to 5 hour window instead of tightening and shredding into dry strings. They also have more flavor, which stands up well to a bold, sweet sauce.
Skipping the broth matters just as much. Chicken releases a surprising amount of juice as it cooks, and the onion adds more. The cranberry sauce and barbecue sauce dissolve into that liquid, so starting without water keeps the final sauce concentrated rather than diluted. The short simmer at the end does the rest. If you prefer chicken breasts, use the same weight and start checking after 3 hours on LOW, since they are done sooner and dry out faster. The same idea of keeping the liquid low and finishing the sauce at the end is what gives our crockpot Tuscan garlic chicken its creamy, clingy sauce.
What to Serve With It
White or brown rice is the easiest match, because it catches every bit of the sauce. Creamy mashed potatoes work just as well, and shredded cranberry BBQ chicken makes excellent sliders on soft dinner rolls with a little coleslaw. For a holiday-style table, set it next to a cheesy green bean casserole; for a casual weeknight, a crisp green salad is enough. A slice of no-knead bread is also welcome for wiping the plate.
Storing, Reheating and Freezing
Refrigerate leftovers in an airtight container within 2 hours of cooking and eat them within 3 to 4 days. Reheat in a covered saucepan over medium-low heat with a splash of water, or in the microwave, until the chicken is steaming hot and reaches 165°F (74°C). The chicken and sauce freeze well for up to 3 months; thaw overnight in the refrigerator before reheating. Frequently Asked Questions
Can I put frozen chicken in the slow cooker?
No. Frozen chicken spends too long at unsafe temperatures before it heats through. Thaw it in the refrigerator overnight first.
Can I use homemade cranberry sauce?
Yes. Use about 1 1/2 cups of a thick, whole berry style sauce. If your homemade sauce is less sweet than canned, add 1 to 2 tablespoons of brown sugar to the sauce mixture.
Why is my sauce still thin?
Either the chicken released more liquid than usual, or the slurry did not come to a full simmer. Cornstarch only thickens once it bubbles, so keep stirring over the heat for another minute or two, or reduce the sauce a little longer before adding the chicken back.
Can I make it spicy?
Add 1/2 teaspoon of red pepper flakes or 1 to 2 minced chipotle peppers in adobo to the sauce mixture. A spicy barbecue sauce works too.
Can I double the recipe?
Yes, in a 6-quart slow cooker. The cooker should end up between half and two-thirds full, and the cooking time may run toward the longer end of the range. For other big-batch slow cooker meals, the crockpot beef stew and the three bean turkey chili both feed a crowd.
