Most people cook a pack of Buldak carbonara exactly the way the package says: boil, drain, stir in the sauce and flakes, eat. It works, but the noodles land somewhere between spicy and sticky, and the bowl is gone in five minutes without feeling like a real meal. This version takes the same pack and turns it into a creamy, cheesy bowl of ramen with a jammy egg and seared sausage on top, with about fifteen minutes of extra effort.
The trick is a splash of heavy cream and a small spoonful of Japanese mayonnaise stirred into the sauce, then a handful of mozzarella melted in at the end. The cream softens the heat without hiding it, the mayo adds a rich, slightly tangy edge, and the cheese turns the sauce glossy and stretchy. A crosshatched sausage and a soft-boiled egg make it filling enough for dinner.

Ingredients
- 1 pack Buldak carbonara spicy chicken ramen, with its sauce and seasoning packets – the base of the dish. Use half the sauce packet if you are sensitive to heat.
- 2 large eggs – soft-boiled until jammy. One is enough for a lighter bowl.
- 1 fully cooked chicken sausage, about 3 oz (85 g), such as a roasted garlic and Gruyère variety – already cooked, so it only needs browning.
- 1/4 cup (60 ml) heavy cream – makes the sauce creamy and tames the heat.
- 1 tsp Kewpie or other Japanese mayonnaise – richer and tangier than regular mayo; a little goes a long way.
- 1/4 cup (about 28 g) shredded mozzarella – melts into a smooth, stretchy sauce.
- 1 green onion, thinly sliced, and 1/2 tsp toasted sesame seeds – for freshness and crunch on top.
How to Make It
1. Soft-boil the eggs – 7 minutes, then 5 minutes in ice water
Bring a small saucepan of water to a boil. Lower the eggs in gently with a spoon and boil for 7 minutes. Move them straight into a bowl of ice water and leave them for 5 minutes. Tap them all over, peel and cut in half. The whites should be set and the yolks thick and jammy, still soft in the very center.
2. Score and sear the sausage – medium, 4 to 5 minutes
Cut shallow diagonal slits along the sausage, then a second row in the opposite direction to make a diamond pattern. Cook it in a dry or lightly oiled small skillet over medium heat, turning, until browned all over and hot through. Slice it into coins. The cuts should open up and the edges should be crisp and caramelized.
3. Cook the noodles – 5 minutes
Bring 600 ml (about 2 1/2 cups) of water to a boil, add the noodles and cook for 5 minutes, as the package directs. Drain, leaving about 8 tablespoons of the cooking water in the pot. The noodles should be tender but still springy.
4. Add the sauce, cream and mayo – medium-low, 1 to 2 minutes
Stir in the sauce and seasoning packets until every noodle is coated. Add the heavy cream and the mayonnaise and stir over medium-low heat until the sauce is smooth and heated through. The sauce should turn a creamy pale orange and cling to the noodles.
5. Melt in the cheese – low, 1 minute
Scatter the mozzarella over the noodles and stir until it melts. Add a splash of water if the sauce gets too thick. It should be glossy and stretchy, not stringy or clumped.

6. Top and serve – 1 minute
Transfer to a bowl and top with the sausage, the egg halves, the green onion and the sesame seeds. Eat right away. The sauce thickens as it cools, so it is at its best in the first few minutes.
How Long to Boil the Eggs
The egg is the topping people care about most, and a minute either way changes it completely. These times are for large eggs taken straight from the refrigerator and lowered into water that is already boiling, then cooled in ice water.
| Boiling time | White | Yolk |
|---|---|---|
| 6 minutes | Just set, very tender | Runny and liquid |
| 7 minutes | Fully set | Jammy, soft in the center |
| 8 minutes | Fully set | Mostly set, fudgy |
| 10 to 12 minutes | Firm | Fully firm |
Altitude, egg size and how many eggs share the pot all shift these times slightly, so treat them as a starting point. The ice bath matters as much as the timer: it stops the cooking straight away and makes the shells easier to peel.
A jammy yolk is not fully cooked. The USDA Food Safety and Inspection Service advises cooking eggs until both the white and the yolk are firm, and notes that pasteurized in-shell eggs can be used without full cooking. For young children, pregnant people, older adults or anyone with a weakened immune system, use pasteurized eggs or boil them for 10 to 12 minutes.
Making It Your Own
- Milder: use half the red sauce packet and a little more cream. The flavor stays, the heat drops.
- Cheesier: add a slice of American cheese with the mozzarella; it melts very smoothly.
- Different protein: leftover rotisserie chicken, seared shrimp or crispy bacon all work in place of the sausage.
- Something fresh: a spoonful of homemade kimchi on the side cuts through the richness.
- No Kewpie: regular mayonnaise works; add a few drops of rice vinegar to get closer to the tangy flavor.
Serving and Leftovers
Creamy ramen is best eaten as soon as it is made. The noodles keep absorbing the sauce, and after even half an hour they turn soft and the sauce dries out. If you want to prepare ahead, boil and peel the eggs in advance: refrigerated in a covered container, they are best within a day or two and are ready to slice onto the bowl.
